These roasted mushrooms with cherry tomatoes make for a flavorful and easy side dish. The balsamic vinegar and herbs give them a deliciously tangy and aromatic touch.

  • 2 cups Mushrooms
  • 1 cup Cherry tomatoes
  • 2 tsp Vegetable or olive oil
  • 2 tsp Balsamic vinegar
  • 2 tsp Thyme
  • 2 tsp Basil
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • Fresh parsley, for serving
  • Preheat the oven to 400°F (200°C).
  • In a bowl, combine 2 cups of mushrooms and 1 cup of cherry tomatoes.
  • Add 2 tsp of vegetable or olive oil, 2 tsp of balsamic vinegar, 2 tsp of thyme, 2 tsp of basil, 1 tsp of salt, and 1/2 tsp of black pepper. Stir well to coat the mushrooms and tomatoes.
  • Spread the mixture on a baking sheet and roast in the preheated oven for 20-30 minutes, or until the mushrooms are nicely browned.
