⚠️ Warning: This recipe in neither Shakshuka nor Lasagna! It is just an easy fusion recipe I love!
I used to make a dish containing minced tomatoes, tomato paste, ground beef and eggs in a pan. It was sooo delicious! I started share this idea with people who tried it and loved the results! One day, a lady told me that actually there is a similar recipe called Shakshuka, so this is where the “shakshuka” part of this dish came from.
Months later, my boyfriend (❤️ fiancé ATM: yay!) told me he really likes lasagna and would love me to prepare one for him. I have never tried to make a lasagna before and since I don’t eat cheese (yeah… I know… I don’t know what I am missing… 🙄) I had to think of a lasagna recipe without cheese… The idea I came up with is to try using my so-called-shakshuka as lasagna’s filling. And voalá! 🥳
Here is how you can easy prepare your own Shakshuka Lasagna:
- 12 uncooked lasagna noodles
- 1 tbsp olive oil
- 500 g Ground beef
- 2 cans x 500g minced tomatoes
- 5 tbsp tomato paste
- 5-6 eggs
Seasoning Ingredients
- 2 tbsp universal vegetable seasoning (so don’t add salt)
- 4 tbsp coconut sugar
- 1-2 tbsp brown sugar
- 2 tsp sweet paprika
- 2 tsp smoked paprika
- 2 tsp chilli powder
- ⅓ tsp ground cinnamon
- ½ tsp cayenne pepper
- ¼ tsp coriander
- ¼ tsp ground nutmeg
- Cook the pasta according to its package instructions (I use pasta which doesn’t need prior cooking, so I’ll skip this step)
- In a medium (or large) sized pot put 1tbsp olive oil and on medium high heat cook the 500 g ground beef until the fat is drained
- Add 2 cans x 500g minced tomatoes and 5 tbsp tomato paste
- Mix all the seasoning ingredients in a separate small bowl and add the mixture in the pot with the beef tomato sauce
- Stir until well combined and cook it for 15-20 mins while constantly stirring and scraping the bottom of the pot so nothing sticks to it
- Preheat the oven to 190ºC (375ºF)
- Assemble the lasagna: Spread sauce over the bottom of the baking dish. Then arrange one layer of noodles. Spread more sauce over the noodles and put another noodle layer over it. Complete the layering by spreading the remaining sauce and gently crack 5-6 eggs over it.
- Bake for 25 mins covered with foil and then another 25 mins without the foil
